With over 100 years Rich with History, Gus and George Dallagiacoma have carried forward the family trade and name in the knife sharpening business … and adding additional services as the needs of their clients increase.
The Dallagiacoma's family business of knife sharpening began in the late 1800's in a small village in Italy called Tirol, located between Italy and Austria. Guistino Maestranzi, patriarch of the family, realized he must leave Tirol to support his family and headed to America, dreaming the dreams of all immigrants … building a business. One he would be proud to own and pass on to his children and grandchildren. Carrying his trade from Italy to Chicago, he did just that … sharpening knives and carcass splitters for the south Chicago stockyards.
Within time, others came seeking employment, this time landing in New York. Brothers Leonard and Victor Dallagiacoma, uncles of Gus and George, used their trade to sharpen knives for butchers and chefs in New York City.
As time passed, and families grew, the trade was passed to the sons. In addition to Gus and George, their brothers Ezio, Henry, Vito, Frank and other family members in Chicago, took the helm and revolutionized the industry. Today Brothers Cutlery is more than knife sharpening … it is a company selling equipment and supplies to meat processors, restaurants, grocery stores and many other businesses who are in need of their services.
